** Pralin croustillant Pistache , Amande , flocons d'avoine & sucre complet**

C'est sur le site de MAKANAI que j'ai découvert ce procedé et je ne regrette pas car je l'ai adopté pour faire croustiller mes desserts, mes gourmandises ,mes petits déjeuners!

Au même titre que la Sauce au caramel fleur de sel , ça va devenir un indispensable dans ma cuisine !!

Le condiments sucré a  avoir toujours sous la main pour  sublimer ses desserts mais également un simple yaourt ou fromage blanc !!

Pour un pot moyen: ( comme mesure j'ai utilisé un mini ramequins de 3 cm de diametre )

-2 mesures de pistache non salé grossiérement mixé,

-1 mesure d'amande grossiérement mixé,

-1 mesure et demie de sucre complet (rapadura ) tellement savoureux ,

-3 mesures de flocons d'avoines.

Mettre touts les ingrédients dans une poêle a feu moyen sans cesser de remuer (trés important ) laisser le sucre carameliser légèrement .

Moi ça a pris 6-7 minutes , c'est pas long et j'ai tellement aimé regarder le mélange doré, Et  humer la  bonne odeur qui s'en dégage...

Eh oui , j'ai déjà hâte de recommencer l'expérience en déclinant les fruits secs: noisettes, cajou, cacahouéte....) 

Remuer vraiment pendant toute la durée de la cuisson car le mélange peut rapidement carboniser .

Une fois que le melange commence un peu a s'agglomerer , et surtout a être bien doré , retirer du feu et laisser refroidir sur une surface plane (abstenez vous de goûter car à ce stade le sucre qui a caramélisé est vraiment chaud !! )

donc on attend patiemment le refroidissement complet .

Soit on le laisse tel quel (comme sur ma photo) en grains irréguliers, ou on le mixe  (robot ou mortier ) pour obetnir une texture plus fine.

J'ai opté pour la prémiére solution et je le mixerai au fil de mes besoins...

Mon test premier a été un simple fromage blanc qui s'est transformé en onctueux croustillant !!!

Le deuxiéme , à la petite cuillére  comme ça à la sauvage et bien c'est aussi divin !!
